Carrot Thoran

1)  Carrot – 3 , grated
2)  Medium Size Onion – 2, finely chopped
3)  Green Chilly – 5 , chopped
4)  Grated Coconut – 1/2 cup
5)  Coconut Oil – 2 tbsp
6)  Curry Leaves – 2 sprigs
7)  Mustard seeds – 1/4 tsp
8)  Turmeric Powder – 1/2 tsp

Heat oil in pan and splutter mustard seeds.
Add turmeric powder and saute for few seconds.
Add curry leaves , grated carrots, grated coconut , chopped green chilly and cook till all water is evaporated and carrots are cooked well.
Serve with Rice.
