Coriander Rice ( Malli Sadam)

For Rice:

1) Basmati Rice – 1 cup
2) Ghee – 2 tbsp

Soak Basmati Rice in water for 2 hours. Wash and drain rice.
Heat ghee in a thick bottom or non stick pan and fry rice.
Boil 2 cups water in a pan and cook rice. Do not over cook. Drain and let rice cool once it is cooked.

For Corainder Mix:

You can either use store bought Corainder chutney or make chutney by yourself. Recipe for Corrainder Chutney follows.

1) Corrainder leaves – a bunch
2) Green Chilly – 6
4) Ginger – 1 inch piece
5) Fresh squeezed lemon juice – 2 tsp
6) Yellow onion chopped – 2 tsp
7) Grated coconut – 2 tsp

Grind together above ingredients and set aside.

To make coriander rice :

1) Yellow Onions – 2 , finely chopped
2) Frozen green peas – 1/4 cup
3) Oil

Heat some oil in pan
Fry chopped onions and green peas.
Add coriander chutney and fry.
Once all vegetables are cooked and all water is evaporated , add cooked rice and mix well.
Chop some fresh coriander leaves and garnish.
