Dosa – Kerala Breakfast Recipe
1) Raw Rice (Pachari) – 1 cup
2) Boiled Rice ( Unakkalari) – 1 cup
3) Uzhunnu Parippu (Urad Dal whole) – 1 cup
4) Fenugreek Seeds – 1/2 tsp
5) Rice flour – 1/2 cup
6) Salt
Soak both rices in water for 8 hours
Mix urad dal and fenugreek and soak in water for 8 hours.
Grind Urad Dal first and then rices.
Grind it to a smooth batter. Please take care not to heat the batter while grinding.Add water if needed.
Add rice flour and salt and mix well.
Make the batter thinner than normal dosa batter for thin and crispy dosa.
Mix well and leave it overnight for fermentation. (If you are living in a colder place keep batter in the oven with oven light turned on)
Make dosa the next day
