Easy Kovakka Fry


To marinate :

1)  Kovakka (Tindora) – 1/2 lb, split lengthwise into 4 pieces
2)  Red Chilly Powder – 1 tsp
3)  Turmeric Powder – 1 tsp
4)  Tamarind pulp – 2 tbsp
5)  Salt


Marinate kovakka(Tindora) pieces overnight mixing red chilly powder , turmeric powder , tamarind pulp and salt.
Next day , deep fry kovakka pieces and dry in a paper towel to remove all oil and set this aside. You can press the fried pieces in a paper towel to remove any oil inside the vegetable as well.

To fry:

1)  Garlic – 1 cloves , finely chopped
2)  Yellow Onion – 1 medium sized, finely chopped
3)  Curry leaves – 1 sprig
4)  Red Chilly Powder – 1 tsp
5)  Oil

Heat some oil in a pan and add chopped garlic. Fry till garlic turns golden brown.
Add chopped onion and fry till they are transparent.
Add curry leaves, read chilly powder to this.
Now add fried kovakka pieces and mix well.
Serve hot with rice.
