Tharavu Roast (Kerala Duck Roast)
For cooking duck:
1) Duck – 1 cleaned and cut into medium pieces
2) Garam Masala powder – 8 tsp
3) Black pepper corns – 5 crushed
4) Green chilly – 5 , slitted length wise
5) Sliced red pearl onions ( ulli) – 1/2 cups
6) 1/4 th of a small ginger root – finely chopped and crushed
7) Turmeric powder – 1 tsp
8) Vinegar – 1 tsp
9) Salt
10) Curry leaves – 1 sprig
11) Coconut oil
12) water
For roasting:
1) Sliced red pearl onions ( ulli) – 2 cups
2) Half of small ginger root – finely chopped and crushed
3) Garlic pods (cloves) – 4 , finely chopped
4) Green chilly -5 , finely chopped and crushed
5) Garam Masala Powder – 1 tsp
6) Coconut oil – 4 tbsp
7) Curry leaves – 3 sprigs
8) Salt
9) Water – 1/4 cup
Marinate duck pieces with ingredients 2 to 10, mix well with hand or wooden spatula. Marinate this overnight in the fridge
Heat some coconut oil in pressure cooker
Add marinated duck mix to the oil and fry till the duck pieces starts to change color and slightly fried.
Add 1/2 cup water and pressure cook till the duck is soft and 3/4th cooked and set aside.
Heat some coconut oil in a pan
Add sliced pearl onions and fry till they turn light golden.
Add crushed ginger, chopped garlic and crushed green chilly to this and saute till the raw smell is gone.
Add garam masala powder, curry leaves to this and saute.
Transfer cooked duck from pressure cooker to this mix and mix well.
Add water and salt if needed.
Saute till you get a thick gravy and serve hot with appam or rice.
