Vendakka Masala
To Marinate :
1) Okra – 10-15 , sliced lengthwise
2) Chana Masala – 1 tsp
3) Pav Bhaji Masaka – 1 tsp
4) Canola Oil – 2 tsp
Mix all ingredients in the “To Marinate” section and set aside for half an hour.
Microwave marinated vendakka pieces till they are cooked and tender. Set this aside.
For Masala:
1) Medium Size Yellow Onion – 2 , thinly sliced
2) Chana Masala – 1 tsp
3) Tomato – 2 medium sized , finely chopped
4) Oil
Heat some oil in a pan and when oil is hot add sliced onions.
Saute till they are transparent.
Add chana masala and chopped tomatoes.
Cook covered till oil separates.
Add microwaved vendakka pieces and mix till all vendakka pieces and covered with masala.
Cook for few minutes and serve with rice or roti.
