Ela Ada
1) Rice flour – 1 cup
2) Grated coconut – 1/4 cup
3) Ripe Plantain – 1/4 cup, cubed small pieces
4) Jaggery – 4 small
5) Sesame Oil (Gingelly oil) – 2 tbsp

Boil 1/4 cup water in a pot and melt jaggery and strain melted jaggery.
Put melted jaggery back to the same pot and add grated coconut to this.
Once this mix starts thickening , add cubed plantain pieces.
Keep cooking till all water is evaported.
Turn off heat and set this aside.

Boil some water in another pan.
Add oil and salt to the boiling water and turn off heat.
Transfer rice flour to a mixing bowl and add hot water to the rice flour and mix well using a spoon.
Knead this to a smooth dough using hands, once it is cooled down.

Place banana leaf on a flat surface and place a portion of rice dough on the leaf. If you don’t have banana leaf, you can use aluminum foil and prachment paper instead. If you are not using banana leaf, place prachment paper on top of the aluminum foil and spread rice on the prachment paper.
Flatten dough to a thin layer. Dip your hands in cold water to make this process easier.
Place coconut mix on one side of the rice layer.
Now fold the leaf and press open sides to close the openings.

Steam this in a steamer and enjoy yummy ela ada.
