1) Pavakka ( Bitter Gourd) – 1 lb
2) Pickle Masala – 2 tbsp or more as needed.
3) Green chilly – 2 , finely chopped
4) Ginger – 1 tsp, finely chopped
5) Garlic – 1/2 tsp, finely sliced
6) White Vinegar – 1/4 cup
7) Sugar – 1 tsp
8) Boiled hot water – 1/4 cup
9) Gingelly oil (Sesame Oil) – 2 tbsp
10) Salt
If you don’t have Pickle masala powder, make your own following this recipe
1) Red Chilly powder – 2 tsp
2) Asafoetida (kayam) – 1/2 tsp
3) Roasted fenugreek powder – a pinch
Mix all of the above dry spice ingredients to make pickle masala.
Cut pavakka into 1 inch long pieces.
Marianne pavakka pieces overnight with 1/2 of the pickle masala powder and salt.
Next day heat gingelly oil in a pan , saute chopped green chilly and ginger.
Add remaining pickle masala powder to this and saute.
Add marinated pavakka pieces and mix well.
Add 1/4 cup boiled water and vinegar and mix well.
Saute till you get a desired consistency.
Add sugar to balance flavors and mix well.
Do a taste test and add more pickle powder or salt if needed.
Once pickle is cooled down , transfer this to an airtight glass container and you can start using this from the next day.
