Kerala Beef Cutlet

1)  Beef – 1 lb, cut into small cubes
2)  Ginger , thinly sliced – 1 tbsp
3)  Green Chilly , thinly sliced – 1 tbsp
4)  Yellow Onion – 1 big , thinly sliced
5)  Potato – 1 big
6)  Meat Masala – 2 tbsp or more if needed.
7)  Curry leaves – 2 sprigs
8)  Bread Crumbs
9)  Three Egg whites – Beaten well using a hand mixer
10)  Salt
11)  Oil

Boil potato in water , remove skin and let it cool. Mash potato once it cooled down and set this aside.
Marinate cleaned beef pieces in salt and meat masala for 1 hour.
Cook beef adding water.
Once beef is 3/4th cooked, add sliced ginger, green chilly, onion and curry leaves.
Add more meat masala if needed.
Remove lid and fry till all water evaporates. Make sure not to over fry beef. Beef has to be moist at this stage.
Let cooked beef cool.
Transfer this to a mixer and finely shred cooked beef.
Heat some oil in a pan , add shredded beef and mashed potato and mix well.
Do a taste test and add more meat masala if needed.
Make small balls of the beef mix and flatten them to an oval shape on your palm.
Dip each one of them in egg white and then in bread crumbs till they are coated evenly with brad crumbs.
Heat some oil in a deep bottom pan or deep fryer and fry beef cutlets.
Serve hot with onion ringlets.

Kerala Beef Stew

For cooking Beef:

1)  Beef – 1 lb , cubed and washed well
2)  1 small yellow onion – sliced thin
3)  1/4 of small ginger root – finely chopped and crushed , approximately 1 tsp
4)  Green chilly – 6 , finely chopped and crushed
5)  Garam masala powder – 1/2 tsp
6)  Meat Masala – 1 tsp ( If you don’t have meat masala , you can make your own masala. Recipe follows)
a)  Chilly powder – 1/2 tsp ( You don’t need this if you are using meat masala)
b)  Turmeric powder – 1/4 tsp
c)  Coriander powder – 1/2 tsp
7)  Potato – 1 medium size, cubed
8)  Curry leaves – 1 sprig

Mix beef with ingredients 5 to 7 and mix them well and marinate for 2 hours.
Transfer marinated beef to a cooking pan, add enough water and cook covered.
Once beef is half cooked, add potato, sliced yellow onion, crushed chilly, crushed ginger to the pan and cook covered.
Once beef and potato is fully cooked turn off heat.

For making stew:

1)  1 small yellow onion – sliced thin
2)  Ginger – 1 tsp, finely chopped and crushed
3)  Green chilly – 3 , finely chopped and crushed
4)  Garlic – 2 cloves – finely chopped
5)  Black pepper corns – 10 crushed
6)  Curry leaves – 2 sprigs
7)  Thenga kothu ( fresh coconut pieces) – 1/2 cup
8)  Flat cinnamon sticks – 1 inch pieces , 5
9)   Cloves – 5
10)  Coconut oil – 3 tbsp
11)  Coconut milk ( Whole milk) – 1/2 cup

Heat coconut oil in a pan and add chopped garlic till it turn color.
Add sliced onion and fry till it turns light golden
Add crushed ginger and chilly and saute
Add crushed black pepper corns, cinnamon sticks ,cloves and saute again
Add curry leaves and thenga kothu and fry again till coconut pieces turn light brown.
Add cooked beef mix to this and mix well.
Add coconut milk and cook without boiling the curry.
Serve hot with Appam or Noolappam.
