Grilled Chicken Tikka

1)  Boneless skinless chicken breast – 1 lb, cubed into small pieces
2)  Chicken Tikka bbq masala (Shan) – 1/4 packet
3)  Yogurt – 1/4 cup
4)  Lemon Juice – 2 tbsp
5)  Oil – 2 tbsp
6)  Cilantro leaves – 1/2 bunch

Mix all ingredients together and marinate one day in refrigerator.
Next day grill till chicken pieces are cooked well and charred a bit.
In the final stage of grilling sprinkle cilantro leaves over chicken pieces and turn off grill once leaves starts to char.
Serve hot with lemon wedges and red onion ringlets.

Chicken Tikka Masala

To make grilled chicken tikka:

1)  Boneless skinless chicken breast – 1 lb, cubed into small pieces
2)  Chicken Tikka bbq masala (Shan) – 1/4 packet
3)  Plain Yogurt – 1/4 cup
4)  Lemon Juice – 2 tbsp
5)  Oil – 2 tbsp
6)  Cilantro leaves – 1/2 bunch

Mix all ingredients together and marinate one day in refrigerator.
Next day grill till chicken pieces are cooked well and charred a bit.
In the final stage of grilling sprinkle cilantro leaves over chicken pieces and turn off grill once leaves starts to char and keep the chicken pieces aside.

To make chicken tikka masala:

1)  Yellow Onion – 3 , finely chopped
2)  Ripe Tomato – 4 , fienly chopped
3)  Fat free milk cream ( Half and Half) – 1 cup
4)  Kasoor Methi ( Dry fenugreek leaves) – 1 tbsp
5)  Lemon Juice – 1 tsp
6)  Chicken Tikka bbq masala (Shan) – 2 tbsp
7)  Chopped fresh cilantro leaves – 3 tbsp
8)  Salt
9)  Oil

Heat some oil in a pan and fry half of the chopped onions and all of the chopped tomatoes.
Once onions and tomatoes are cooked and oil starts separating , transfer this to a mixer and let it cool.
Once the mix is cooled down, grind this to a smooth paste and set this aside.
Heat some oil in the same pan and fry remaining chopped onion till onion turns light golden.
Now add onion tomato paste and fry till oil separates.
Lower heat and add tikka masala powder, lemon juice , kasoor methi leaves and mix well.
Add fresh cream and mix well.
Add grilled chicken pieces to this and mix well.
Add salt and chopped cilantro leaves.
You can add more tikka masala powder if you like the dish spicy.
Garnish with more cilantro leaves and serve hot with nan or rice.
