Curd Rice ( Thayir Sadam)

For Rice:

1)  Basmati Rice – 1 cup
2)  Ghee – 2 tbsp

Soak Basmati Rice in water for 2 hours. Wash and drain rice.
Heat ghee in a thick bottom or non stick pan and fry rice.
Boil 2 cups water in a pan and cook rice. Do not over cook. Drain and let rice cool once it is cooked.

For Curd Rice:

1)  Thick Curd – 1/4 cup
2)  Split Chana Dal – 2 tsp
3)  Green Chilly – 6
4)  Ginger – 2 inch piece , finely chopped
5)  Dry Red Chilly – 4
6)  Curry leaves – 2 sprigs
7)  Asafoetida ( Kayam) – a pinch
8)  Oil

Mix cooked rice , curd , salt and set aside.

Heat some oil in a pan and fry split chana dal and dry red chilly till dal turns slightly golden.
Add slitted green chilly, chopped ginger , curry leaves and fry.
Add curd to this and mix well.
Add asafoetida powder and mix well.

For better taste, you can mix sour cream and curd instead of just using curd.

Tomato Rice ( Thakkali Sadam)

For Rice:

1)  Basmati Rice – 1 cup
2)  Ghee – 2 tbsp

Soak Basmati Rice in water for 2 hours. Wash and drain rice.
Heat ghee in a thick bottom or non stick pan and fry rice.
Boil 2 cups water in a pan and cook rice. Do not over cook. Drain and let rice cool once it is cooked.

For tomato masala :

1)  Yellow Onion – 2 , thinly sliced
2)  Tomato – 2 finely chopped
3)  Cloves – 4
4)  Flat cinnamon – 3 , 1 inch piece
5)  Green Chilly – 5
6)  Ginger – 1 inch piece, finely chopped
7)  Dry Red Chilly – 5
8)  Curry leaves – 2 sprigs
9)  Mustard seeds
10)  Tomato rice spice powder – 2 tsp ( If you don’t have tomato rice spice powder you can make your own. Recipe follows)

Tomato Rice Spice Powder:
1)  Red chilly powder – 1/4 tsp
2)  Few pinches of turmeric powder
4)  Garam Masala powder – 1/4 tsp
5)  Few pinches of asafoetida powder.

Heat some oil in a pan and splutter mustard seeds.
Add dry red chilly, cloves and cinnamon and fry.
Add slitted green chilly, curry leaves, chopped ginger and fry.
Now add thinly sliced onions and fry till onions turn lightly brown.
Add chopped tomatoes and fry till all water evaporates.
Add tomato rice spice powder and mix well.
Add more curry leaves if needed.
Add cooked rice and mix well.
Enjoy delicious tomato rice !!!
