For Rice:
1) Basmati Rice – 1 cup
2) Ghee – 2 tbsp
Soak Basmati Rice in water for 2 hours. Wash and drain rice.
Heat ghee in a thick bottom or non stick pan and fry rice.
Boil 2 cups water in a pan and cook rice. Do not over cook. Drain and let rice cool once it is cooked.
For Curd Rice:
1) Thick Curd – 1/4 cup
2) Split Chana Dal – 2 tsp
3) Green Chilly – 6
4) Ginger – 2 inch piece , finely chopped
5) Dry Red Chilly – 4
6) Curry leaves – 2 sprigs
7) Asafoetida ( Kayam) – a pinch
8) Oil
Mix cooked rice , curd , salt and set aside.
Heat some oil in a pan and fry split chana dal and dry red chilly till dal turns slightly golden.
Add slitted green chilly, chopped ginger , curry leaves and fry.
Add curd to this and mix well.
Add asafoetida powder and mix well.
For better taste, you can mix sour cream and curd instead of just using curd.
